Not Your Grandma's Sweet Potatoes

NC State researchers Drs. Craig Yencho and Bryon Sosinski are spending a whole lot of time these days thinking about sweet potatoes. But that's not because Thanksgiving dinner is right around the corner. The scientists are cultivating sweet potatoes that are white inside and out, bulbous, overly starchy and contain genes from deep-sea bacteria.
These are industrial sweet potatoes, not the ones you put in your sweet potato pie.
Enzymes produced in deep-sea thermal vents could help the industrial
sweet potato convert practically all of its starch into simple sugars
that can then be processed into ethanol. Even without the extra help,
sweet potatoes hold the potential for ethanol production.

Holiday Reminder
As you make your holiday plans, remember that campus will be closed from Saturday, Dec. 22 through Tuesday, Jan. 1. All but two days (Dec. 28 and 31) are official university holidays. To remain in paid status for the entire winter break, leave-earning employees should plan to use accrued annual, comp, bonus leave or their floating holiday for the two additional days not designated as official holidays.
