Research Interests
My research involves basic and applied studies that relate to the chemistry of peanuts and peanut-derived ingredients. Examples of recent projects include: 1) Value added processing of aflatoxin contaminated peanut meal and similar materials for the production of aflatoxin free ingredients suitable for food and feed applications. 2) Investigations into the effects of roasting and other processes on the texture, flavor and nutritional properties of peanuts and related oilseeds, 3) Characterizations of functional and bioactive properties of peanut seed, peanut skin, peanut flours, etc. with an emphasis on proteins/peptides.
