Research Interests

My research involves basic and applied studies that relate to the chemistry of peanuts and peanut-derived ingredients. Examples of recent projects include: 1)The rheological characterization of peanut flour across a range of conditions to improve the texture of new and existing products containing this ingredient. 2) Isolation, characterization and enzymatic hydrolysis of peanut proteins for the production of bioactive peptides derived from peanut meal suitable for use as food and feed ingredients. 3) Rheological investigations of peanut oil derived from various sources with emphases on both food science and biodiesel applications.
