Research Interests
My goal is to utilize developing
genomic and bioinformatics techniques to identify the metabolic
potentials of microorganisms present in vegetable fermentations
in order to improve the quality, safety, and value of the
commercial products. Developing improved techniques to prevent
the growth of spoilage microorganisms and assure inactivation
of pathogenic bacteria in acidified vegetable products.
Reducing waste generation in vegetable processing, and developing
techniques to utilize waste brines are also of interest
to me.
