Honey Spice Cake-
Ingredients:
*2 eggs
*1/2 cup brown sugar
*2 cups all-purpose flour
*1/2 teaspoon baking soda
*1 cup honey
*1/2 cup raisins
*1/2 cup sliced almonds
1. Grease and flour a 9x5" loaf pan. Preheat oven to 350
degrees Farnheight.
2. Beat eggs in a small bowl. Add sugar and stir well.
3. Pour flour into large mixing bowl. Add egg mixture and
baking soda, stir well.
4. Add honey and mix for ten minutes. Stir in raisins.
5. Pour dough into pan, level it out, and sprinkle with nuts.
6. Bake for 50-60 minutes, or until a toothpick can be stuck
in the cake and comes out clean.
7. Serve with whipped cream or jam.
Blini-
Ingredients:
*4 cups all-purpose flour
*2 cups buttermilk
*1 egg
*1/2 teaspoon salt
*1 tablespoon sugar
*1/2-1 cup warm water (optional)
*1/4 cup sunflower oil for frying
1. Place flour in large bowl. Gradually add buttermilk, stir
well to prevent lumps.
2. Add egg, salt, and sugar and stir until blended. Should
resemble pancake batter. If too thick, stir in water.
3. Set batter in warm place for 10-15 minutes.
4. Lightly grease a small frying pan with 1 tablespoon of the
oil. Heat pan for several seconds on medium heat.
5. Pour 1/4 cup of batter into pan, quickly stirring so a
thin, even layer covers bottom. When edge of pancake lifts
easily, flip.
6. Remove pancake, put on plate, cover with cloth towel.
Repeat.
Sharlotka
(Apple Charlotte Dessert)-
Ingredients:
*1/2 cup butter or margarine
*4 cups bread crumbs
*1/4-1 cup sugar, more or less to taste
*4 cups cooked apple slices, homemade or canned
1. Melt butter/margarine in skillet over medium heat, add
bread crumbs and mix well to brown evenly. Add 1/4 cup sugar,
reduce heat to low, mix well to blend. Cook for two minutes
and remove from heat. Set aside.
2. Put apples in mixing bowl, add remaining sugar. Mix well.
3. Preheat oven to 350 degrees Farnheight.
4. Cover the bottom of a baking pan with the crumb mixture
about 1/4" deep. Alternate layers of apples and crumbs,
ending with the crumbs on top. Butter wax paper and put on
top of the crumbs. Bake in oven for 20 minutes, or until
golden brown. Remove wax paper.
