Polish Food: Recipes: Spring Salad
Spring Salad
Serves: 6
Ingredients
12 oz cottage cheese
1 carrot, coarsely grated
8 radishes, coarsely grated
2 green onions, thinly sliced
A pinch of salt and pepper
1 tsp chopped fresh dill or marjoram
1/2 cup sour cream or thick yogurt
Lettuce leaves (red oak leaf lettuce, curly endive, or radicchio)
1. If cottage cheese is very liquidy, pour into a fine strainer and leave to stand for 15-20 minutes. Alternatively, strain the sour cream for the same amount of time in a fine strainer.
2. Peel the carrots and shred them using the coarse side of the grater, or the coarse blade of a food processor. Make sure the carrots are shredded into short strips.
3. Shred the radishes with the grater and cut the onion into thin rounds with a large, sharp knife.
4. Mix all the ingredients together, except the lettuce leaves, and chill for about 20 minutes to blend all the flavors.
5. To serve, place lettuce leaves on individual plates and mound the cottage cheese salad on top. If desired, sprinkle with more chopped fresh dill.
