Polish Food: Recipe: Sweet Pierogil

Sweet Pierogil

Serves: 8

Dough Ingredients

2 cups all purpose flour
A pinch of salt
5 oz butter or margarine
1 egg
1 tbsp thick yogurt or sour cream
Oil for frying

Cheese Filling Ingredients

8 oz dry cottage cheese
1 egg yolk
2 tbsps sugar
2 tsps finely chopped candied orange peel
2 tbsps currants

Plum Filling Ingredients

4-6 purple plums, halved, stoned, and chopped
1/3 cup sugar
Sour cream
Grated nutmeg or cinnamon

1. Sift the flour with a pinch of salt into a large bowl. Cut the butter into small pieces and rub into the flour until the mixture resembles fine breadcrumbs.
2. Mix the egg and the yogurt or sour cream together and combine with the flour and butter to make a firm dough. Knead the dough together quickly into a bowl, wrap well and chill for 30 minutes.
3. Roll out dough very thinly on a well floured surface and cut circles about 3 inches in diameter.
4. For the cheese filling, beat the cottage cheese, egg yolk, and sugar together until smooth. Stir in the peel and the currants by hand. Place a small spoonful of filling on half of the dough circles and moisten the edges of the dough with water. Fold over one half and seal the edges well. Crimping with a fork will give the pierogil a very nice look after cooking.
5. On the remaining half of the dough circles, place on some of the chopped plums and sprinkle with sugar. Seal the edges as before.
6. To cook the pierogil, drop a few at a time into boiling water. Simmer for 2-3 minutes or until they float to the top. Lift out of water with a slotted spoon and drain on paper towels.
7. When all the pierogil are done, heat about 4 tbsps of oil in a frying pan and cook pierogil over brisk heat for 3-4 minutes, or until lightly browned on both sides. Place the pierogil on a serving plate and top with sour cream sprinkled with either nutmeg or cinnamon.
