Yates Mill Associates sells a variety of souvenirs on corn-grinding weekends, including stone-ground cornmeal, cook books, tote bags, mugs, t-shirts, sweatshirts, baseball caps, jewelry and note cards. Items may be purchased at other times by emailing YatesMillCornmeal@hotmail.com or calling 919-856-6675 and making arrangements for pick-up at the park.

Cooking with Cornmeal
Fresh, stone-ground cornmeal makes fabulous corn bread! Top with pinto or black beans, a spoonful of sour cream or plain yogurt and melted cheese, and you’ve got a tasty meal that’s nutritionally complete. Corn bread is an easy and versatile dish to make. For a hot and spicy version, add a 12 oz. jar of jalapeno peppers to a 9” skillet of corn bread batter.

Yates Mill cornmeal is “unbolted.” That means it has not been sifted. The meal contains the entire corn kernel, including the outer shell (husk) and naturally occurring fats (germ). Whole kernel cornmeal is high in fiber and contains all the nutrients and essential fatty acids of whole kernel corn. However, it also means there is a chance that hard corn kernel particles may be present in the finished product. For that reason, always sift the cornmeal before using it. Store cornmeal meal in the refrigerator and use it within two months for the freshest taste.

Cornmeal produced by Yates Mill is tested by the North Carolina Department of Agriculture & Consumer Services and made in compliance with all applicable food regulations.
